Why should I not change the date between 9 PM and 3 AM?

On many watches, the date-changing mechanism begins to engage around midnight. Using the quick-set date while it is engaged can damage the movement. The exact restricted period varies by movement, so follow the instructions for your watch. If you are unsure, move the hands to about 6:30 before setting the date, then set the correct time.
